Ana Frias is a food photographer and blogger who shares her love of authentic Mexican food with readers on her blog Muy Delish. Born and raised in Sonora, Mexico, her recipes are inspired by her native country and include both healthy eats and some truly indulgent treats. From Papas con Huevos to authentic Ceviche de Pescado, you’ll find plenty of delicious ways to spice up your dinner table.
We recently sat down with Ana to discuss Mexican cuisine and her favorite recipes.
I’m Ana Frias, a food photographer and blogger, wife, and mother of two. My cooking is based on the authentic Mexican recipes I learned from my mom and other family members. I love to cook for others and regularly host dinners at my house to inspire others to cook as well. I was born and raised in Sonora, Mexico, and currently live in Surprise, Arizona.
I think there’s been a lot of misconceptions about Mexican food being unhealthy, but this couldn’t be further from the truth! There are so many healthy recipes that are full of flavor with good-for-you ingredients. I love healthy, flavorful Mexican food!
I think good quality ingredients make a difference. People forget that with Mexican food. They think, “we’ll just throw in the spices.” But actually, fresh spices that you grind at home make a massive difference. Also, adding multiple layers of flavor make the best dishes, too. Think of how you build a taco: the tortilla, the meat, some roasted veggies, salsa, crema, lemon juice, etc. It’s like an explosion of flavors in your mouth that all blend together.
My mother was famous for her flour tortillas, and it’s one that is close to my heart because of that. Even though it’s a simple recipe, there are a few tips that need to be followed to make a soft flour tortilla, but it’s one that gets better the more you make it. I hope you enjoy it!
3 cups all-purpose flour tortillas (plus more to dust when rolling)
1 tsp table salt
1/2 tsp baking powder Optional
1/2 cup vegetable shortening (plus more to coat the tortilla dough) or 1/4 cup vegetable, canola oil or butter
1 cup very hot water
